Lamb's lettuce with harissa halloumi and avocado
Is it time for the last harvest of lamb's lettuce? Then grab some scissors and bring it to the kitchen. There you can combine it with halloumi and avocado to make a delicious salad . Your taste buds will thank you!
You need these ingredients (2 people):
- 200g halloumi
- 20g harissa
- 1 tsp honey
- 4 tbsp olive oil
- 1 lemon
- 80g lamb's lettuce
- 200g cherry tomatoes
- 2/3 cucumber
- 1 avocado
- 30g kernel mix
- Salt
- pepper

- Dice the halloumi, put it in a bowl and mix it with the harissa.
- Heat oil in a pan and fry halloumi for about 3 minutes until golden brown.
- Wash the lettuce and let it drain.
- Wash tomatoes and cut them in half.
- Wash and dice the cucumber.
- Halve the avocado, remove the stone and dice.
- Halve the lemon and squeeze out the juice.
- For the dressing, mix olive oil, lemon juice and honey. Add salt and
pepper. - Arrange all ingredients on a plate, pour dressing over it,
Sprinkle with seeds and mix.
