French tomato and vegetable quiche
Is your rosemary growing rampantly in your garden and you're stuck for what to do with it? Then simply bake some of these delicious quiches to get the problem under control.
You need these ingredients (4 people):
- 2/3 onion
- 2/3 eggplant
- 2/3 zucchini
- 2/3 bell peppers
- 200g tomatoes
- 1.2 sprigs of fresh rosemary
- 2 eggs
- 120g grated cheese
- 160g crème fraîche
- 100g natural yogurt
- 160g wheat flour type 405
- 30g butter
- 2 tsp olive oil
- ½ tsp dried herbs de Provence
- Salt
- pepper

Preparation (~30 minutes)
- Preheat oven to 200°C.
- For the dough, knead together butter, yogurt, flour, oil and a pinch of salt.
- Roll out the dough and place it in an oiled pan.
- For the filling, wash and dice the eggplant and zucchini.
- Wash the peppers , remove the seeds and dice them.
- Wash tomatoes and cut into slices.
- Peel and dice the onion.
- Heat oil in a pan and fry onions for 3-4 minutes until golden brown.
- Add the eggplant , zucchini and peppers and sauté for 6-8 minutes until the vegetables have reduced in volume. Season with Provençal herbs , salt and pepper.
- For the topping, whisk eggs with grated cheese and crème fraîche. Season with salt and pepper.
- Spread the vegetables on the dough and pour the topping over them. Garnish with tomatoes and rosemary and bake for 25-30 minutes.
- Let the quiche cool slightly, cut into pieces and serve.
