Lentils, onions and tahini sauce

You need these ingredients (2 people):
- 180g green lentils
- 30g parsley , fresh
- 30g coriander , fresh
- 4 sprigs of thyme , fresh
- 30g raisins
- 100g tahini (sesame paste)
- 2 onions
- 2 lemons
- bay leaves
- Cumin, ground
- olive oil
- Water
- Salt
- pepper
- Garlic

All the ingredients ready? Then let's get started!
- Bring lentils to a boil in a pot of water and simmer with bay leaf for 25 minutes.
- Peel the onion, halve it and cut it into thin half rings.
- Heat oil in a pan and fry lightly salted onions over medium heat for about 20 minutes, stirring occasionally, until they turn a dark brown color.
- Wash the parsley , shake it dry and chop it.
- Wash the coriander , shake it dry and chop it.
- Halve the lemon and squeeze out the juice.
- Peel and chop the garlic.
- Wash the thyme , shake it dry and chop it.
- Place the garlic and half of the lemon juice in a bowl and let it steep for 10 minutes. Then strain the garlic, reserving only the lemon juice.
- In a bowl, combine tahini with water, flavored lemon juice, and olive oil. Season with salt and pepper.
- Mix cooked lentils with onions, chopped herbs , and raisins. Season with salt, pepper, cumin, and the remaining lemon juice.
- Place the tahini sauce and lentils on a plate, garnish with herbs and enjoy.
