Rhubarb and strawberry galette
Are the first strawberries ripening in your garden? Then resist the urge to snack on them right away and whip up a delicious rhubarb and strawberry galette in the kitchen. Your discipline will pay off as soon as you pull this fragrant treat out of the oven. Enjoy!
You need these ingredients (2 people):
- 100g wheat flour type 405
- 3 tablespoons sugar
- 50g butter
- 100g rhubarb
- 200g strawberries , fresh
- 1 tbsp cornstarch
- 6 g mint , fresh
- 1/2 lemon(s)
- 1/4 egg(s)
- Salt

All the ingredients ready? Then let's get started!
- For the dough, mix flour, salt and 1/3 of the sugar.
- Add cold butter in cubes and mix briefly until the butter pieces are no larger than a pea .
- Then add water (40 ml) and knead into a smooth dough.
- Wrap the dough in cling film and place it in the refrigerator.
- Preheat oven to 220°C.
- Wash the rhubarb and cut it into slices.
- Wash strawberries and cut into pieces.
- Wash the lemon thoroughly and grate the peel.
- Place rhubarb, strawberries and lemon zest in a bowl.
- Add sugar and cornstarch and mix well.
- Take the dough out of the fridge and roll it out into a circle on a lightly floured surface.
- Place on a baking sheet lined with baking paper and spread the filling evenly in the center, leaving about 3 cm of space all around.
- Fold over the remaining edge and brush with a little beaten egg.
- Place the galette in the oven for about 25 minutes.
- Wash the mint , shake it dry and pick off the leaves.
- Let the galette cool slightly, decorate with mint and enjoy
