Spinach chicken with couscous
Did you just see the picture above and have to wipe the drool from your mouth? Then get to the stove: This recipe is easier than you think!
You need these ingredients (4 people):
- 600g chicken breast fillet
- 240g whipped cream
- 8 sprigs of fresh thyme
- 20g butter
- 2 cloves of garlic
- 160g fresh leaf spinach
- 80g tomatoes , dried
- Salt
- pepper
- 4 tsp paprika powder
- 240g couscous
- 0.48l vegetable broth
- 4 tbsp vegetable oil
- 4 tsp wheat flour type 405

Preparation (~30 minutes)
- Chop the dried tomatoes into small pieces.
- Wash fresh spinach leaves and let them drain.
- Peel the garlic and dice finely.
- Wash the thyme , shake it dry and pick off the leaves.
- Season chicken breast with salt, pepper and paprika.
- Heat oil and butter in a pan and fry the chicken breast until golden brown on both sides. Then remove from the pan and keep warm.
- Add thyme , garlic and dried tomatoes and fry for 1 minute.
- Add flour to the pan and fry for another 30 seconds.
- Add cream and season with salt and pepper.
- Return meat to the pan and simmer for 2-3 minutes.
- Add spinach and continue cooking for about 2 minutes until the spinach has wilted.
- Bring the vegetable broth to a boil and pour over the couscous. Remove from heat and let it swell according to the package instructions.
- Fluff the couscous with a fork, place it on a plate and serve with the chicken.
