Classic gazpacho with tomatoes, peppers & cucumber
Is the basil in your garden slowly stealing the sun? Then give it some scissors and turn it into a delicious gazpacho. Your palate will thank you!
Preparation (~30 minutes)
- Soak toast bread in a little water.
- Wash the tomatoes , peppers , and cucumber and cut into large cubes. Set aside some vegetables for decoration.
- Peel and dice the onion and garlic.
- Purée the vegetables and toast with a hand blender or in a food processor until the soup reaches a creamy consistency. If it's too thick, simply add a little water.
- Then add oil, season with a dash of balsamic vinegar, salt, and pepper. Let it chill in the refrigerator.
- Dice the remaining vegetables.
- Wash the basil, shake it dry and pick off the leaves.
- Before serving, sprinkle basil over the soup, add finely diced vegetables and serve.
