- 1/4 red cabbage(s)
- 1 carrot(s)
- 1/2 bell pepper(s)
- 1 spring onion(s)
- 1 stalk of celery
- 1/2 apple
- 1/4 mango(s)
- 3 tbsp olive oil
- 1/4 chili pepper(s)
- 1/2 tsp mustard
- 1/2 tbsp apple cider vinegar
- 20 g pumpkin seeds
- Salt
- pepper

- Wash red cabbage and chop finely.
- Wash the peppers , remove the seeds and cut into fine strips.
- Wash spring onions and cut diagonally into rings.
- Wash the celery and chop finely.
- Peel the carrot and grate it coarsely.
- Wash the apple and grate it coarsely.
- Peel the mango and dice the flesh.
- Wash the chili , deseed it and dice it finely.
- Finely puree the mango, chili, olive oil, mustard, and apple cider vinegar. Season with salt and pepper.
- Mix the prepared ingredients and the mango dressing in a bowl.
- Sprinkle with pumpkin seeds and enjoy.
