Zucchini fritters with yogurt and mint dip

- 3 zucchinis
- 60g wheat flour type 405

- 1 spring onion(s)
- 100g Greek yogurt
- 40g feta cheese
- 10g mint , fresh
- 1/4 lemon(s)
- 2 tbsp vegetable oil
- Salt
- pepper

- Wash the zucchini and grate it coarsely.
- Place the grated zucchini in a sieve, add salt and let it stand for about 10 minutes until the salt has drawn the water out of the zucchini .
- In the meantime, wash the mint , shake it dry and pick off the leaves.
- Place Greek yogurt, crumbled feta, and mint leaves in a blender and blend. Alternatively, finely chop the mint and mix with the finely crumbled feta and yogurt.
- Season the yogurt mix with lemon juice, salt and pepper and set aside.
- Wash spring onions and cut into rings.
- Squeeze the zucchini grater well, pressing out as much liquid as possible.
- In a bowl, combine grated zucchini , eggs, flour, and spring onions . Season with pepper.
- Heat oil in a pan.
- Add the zucchini mixture to the pan with a tablespoon and fry the pancakes until golden brown on both sides.
- Serve zucchini fritters with yogurt, feta and mint dip.
