Salmon fillet on crispy beans
For (urban) gardeners, the summer months are filled with joy. Wherever you look, plants are growing and thriving, and the fruits are finally ripening. You can conjure up a truly delicious dish with snow peas and French beans , which KptnCook recommended. We tested it, and lo and behold: it really is as delicious as it looks! So, get to the oven and into your tummy... Yummy! ;-)
You need these ingredients (2 people):
- 200g salmon fillet
- 200g green beans
- 200g sugar peas
- 1 shallot(s)
- 1 clove(s) garlic
- 60g kumquat
- 40g hazelnut kernels, whole
- 1/2 orange(s)
- 4 sprigs of thyme , fresh
- 4 tbsp olive oil
- 10g butter
- Salt

All the ingredients ready? Then let's get started!
- Preheat oven to 150°C.
- Place hazelnuts on a baking sheet and roast in the oven for about 10-12 minutes. Then remove from the oven and let cool slightly.
- Wash the beans and snow peas and cut off the ends on both sides.
- Bring a pot of water to a boil and blanch the beans for 4-5 minutes.
- Then add the sugar snap peas and simmer for another 2 minutes.
- Drain everything through a sieve and rinse with cold water so that they stay nice and green.
- Peel the shallots, halve them lengthwise and cut into fine strips.
- Peel the garlic and cut into thin slices.
- Wash the kumquats with hot water to minimize the bitterness and cut them in half or into three to four slices, depending on their size.
- Wash the orange thoroughly, dry it, and peel a thin layer of zest with a vegetable peeler. Then, using a knife, cut the zest lengthwise into thin strips. Halve the orange and squeeze the juice.
- Rub the hazelnuts between your hands with a kitchen towel or paper towel to loosen the shell. Then halve the nuts. Simply chop with a large knife; you don't need to halve every hazelnut.
- Heat oil in a pan. Season the salmon with salt and pepper and fry for 3 minutes on each side, until the salmon fillet turns from a vibrant pink to a pale pink on the sides.
- Heat a second larger pan and melt butter in it.
- Now add the beans , sugar snap peas , shallots and garlic.
- Wash the thyme , shake it dry, strip the leaves from the sprigs and add them to the pan.
- Fry everything over medium heat until the onions are translucent.
- Add kumquats, orange strips and juice, hazelnuts and olive oil.
- Season everything with salt and pepper. Arrange on a plate and serve.
