Breakfast for Champions

Ingredients for 4 servings
Note: You'll need paper towels to prepare this dish. And if you have one, feel free to bring your salad spinner!
- 110 - 220 g (as desired) curd cheese with SKYR cultures
- 1 large sweet potato
- 1 tbsp olive oil
- 2 eggs
- 100 g arugula
- 1 mango
- 50 g almond sticks
- 1 avocado
- 3 tbsp coconut oil
- 1 lime
- 100 ml apple juice
- 1 tbsp honey
- Salt & Pepper
All the shopping and hauling it home? Then take a breath and move on:
- Preheat oven to 190 °C, line baking tray with baking paper.
- Brush the sweet potato with olive oil, then season with salt. Bake in the preheated oven for about 45 minutes, until tender.
- Spread the almond slivers on another baking tray and roast them in the oven for 6-8 minutes.
- Wash the arugula and spin dry.
- Dressing: Combine lime juice, honey, and apple juice in a measuring jug and mix until combined. Slowly drizzle in coconut oil and continue mixing gently. Finally, season with salt and pepper.
- Peel the mango, remove the pit, and cut into approximately 2 cm cubes. Halve the avocado, remove the pit, scoop out the flesh, and cut into approximately 2 cm cubes. Place the avocado and mango in a bowl. Add some of the dressing and gently fold in. Marinate the washed arugula with the remaining dressing.
- Cut the curd cheese into small cubes.
- Remove the sweet potato from the oven along with the baking sheet. Halve the sweet potato and scoop out about half of it. Distribute the curd cheese cubes among the sweet potato halves.
- Crack the egg and carefully pour it into one sweet potato half (over the curd cheese cubes). Then repeat with the next half and egg. Bake the halves again in the hot oven on the baking sheet for 10-15 minutes, until the eggs are set.
- Place the warm halves on a flat plate, arrange the avocado-mango cubes on top, and top with the marinated arugula. Sprinkle the almond slivers over the arugula.
