Hummus with roasted tomatoes
You've waited a long time: You grew your tomato plants from seed in February, watered them, pinched them, and kept a watchful eye on them. Your care finally pays off in August: The tomatoes are ripe! If you're strong enough and don't snack on the red delicacies straight from the vine, you can also conjure up many delicious dishes with them. For example, "Hummus with Roasted Tomatoes" – a recommendation from our friends at KptnCook . And they know what tastes good. So, what are you waiting for? Quickly harvest a few of these delicious marbles from the vine and get to the kitchen ;-)
You need these ingredients (2 people):
- 240g chickpeas, canned or jarred
- 30g tahini
- 4 tbsp olive oil
- 4 tbsp water
- 1/2 lime
- 1/4 garlic clove
- 1/2 tsp ground cumin
- 400g tomatoes (cherry)
- 2 tsp honey
- 10g parsley , fresh
- 30g pine nuts
- Salt
- pepper
Tip: This recipe also tastes delicious with other tomato varieties. Yellow, black, or yellow tomatoes add even more color to your plate!

Everything ready? Then let's get started!
- Preheat oven to 180°C
- Wash and halve tomatoes
- Place tomatoes on a baking sheet lined with baking paper or in an ovenproof dish. Drizzle with honey and oil and bake for 10-15 minutes.
- In the meantime, roast the pine nuts in a pan until golden brown
- Peel and dice the garlic
- Halve the lime and squeeze out the juice
- Finely blend drained chickpeas, ice-cold water, tahini, olive oil, lime juice, and garlic. Season with cumin, salt, and pepper.
- Wash parsley, shake dry and chop
- Spoon hummus onto plates, top with baked tomatoes, and sprinkle with pine nuts and parsley.
