Crispy kohlrabi salad with hazelnuts

You need these ingredients (2 people):
- 80g hazelnut kernels, whole
- 10g parsley , fresh
- 3 tbsp olive oil
- 3 tbsp red wine vinegar
- Salt
- pepper
- 1 tbsp agave syrup
- 1 shallot(s)
- 2 kohlrabi(s)
- 0.5 lemon(s)

All the ingredients ready? Then let's get started!
- Peel and halve the kohlrabi. Then cut it first into slices and then into small cubes.
- Roast hazelnuts in a pan without oil over medium heat for 5 minutes.
- Then roughly chop the hazelnuts.
- Wash the lemon and grate the peel.
- Peel the shallot and dice finely.
- In a bowl, mix olive oil, shallot, agave syrup, red wine vinegar, pepper and salt and let stand for 5 minutes.
- Place kohlrabi, hazelnuts and lemon zest in a bowl and mix with the dressing.
- Wash the parsley , shake it dry and chop it roughly.
- Add parsley to the salad and mix.
- Garnish the salad with more parsley and lemon zest if desired and serve.
