Vegan shortcrust pastry cakes with strawberries

You need these ingredients (for 8 cakes):
- 300g spelt flour
- 170g vegetable margarine
- 600ml oat milk
- 240g strawberries , fresh
- 40g unsalted pistachios
- 1 tsp baking powder
- Salt
- 120g coconut blossom sugar
- 1 Bourbon vanilla pod
- 4 tbsp maple syrup

- Preheat oven to 180°C (top and bottom heat, recommended) or 160°C (fan oven).
- Remove margarine from the refrigerator, set aside and let it soften.
- Sift flour into a bowl and mix with baking powder and salt.
- Add the sugar and margarine and knead with your hands until combined and slightly crumbly. Reserve some of the margarine to grease the baking cups.
- Brush the baking cups with the remaining margarine, divide the batter between the cups, and press it firmly into the bottom and sides. Pierce the batter with a fork and bake for about 10 minutes. Then let it cool slightly.
- Meanwhile, roast the pistachios in a pan without oil. Then chop finely.
- Wash strawberries , drain and halve or quarter them.
- Cut the vanilla pod lengthwise and scrape out the seeds.
- Put the vanilla pulp and pod, salt and most of the milk into a saucepan and bring to a boil.
- In the meantime, mix the starch with the maple syrup and the remaining milk.
- Remove the vanilla pod from the pot. Then add the starch mixture and simmer for 1 minute over medium heat, stirring constantly.
- Spread the vanilla pudding into the molds, add the strawberries and let it rest for a moment.
- Garnish strawberry cakes with pistachios and enjoy.
